Stewed Okra and Tomatoes

Garden fresh okra and tomatoes make the most perfect summer side dish.  This is one that reminds me of my grandmother and serves as a warm , comfort food.

INGREDIENTS
2 Tablespoons extra virgin oil
2 tablespoons minced garlic
4 cups sliced okra
1 medium onion , chopped
1 cup chopped tomatoes
2 cups water
1 teaspoon black pepper

Heat oil and add garlic to large skillet. Cook 2 minutes.

Add vegetables, water, and seasonings. Mix well.

Bring to a boil then reduce to simmer.

Cover with lid and cook on low/simmer for approximately 25 minutes or til water is cooked through. Stir during cooking. May add more water , if needed. Just make sure water is cooked through.

A summer favorite at our house. When okra is not in season and picked fresh from the garden, I use frozen. Make a large serving to keep in the refrigerator. It reheats well and delicious as a bowl meal or side.
