Blueberry and Banana Nut Muffins

Enjoy these wholesome muffins at breakfast or as an afternoon snack with a cup of coffee.

4 ripe bananas
1/2 cup almond milk
1/4 cup maple syrup
2 flax eggs ( mix two tablespoons of flax meal with 6 tablespoons of water. Set aside 5 minutes til thick.
1 teaspoon vanilla
1/4 cup olive oil
2 1/2 cups oatmeal
1 teaspoon baking powder
2 teaspoons cinnamon
1/4 cup walnuts
1 cup frozen blueberries
1 teaspoon salt

Prepare muffin pan by coating with cooking oil spray. I use coconut oil. Set aside.

Add wet ingredients to a ninja or high powered blender. Bananas, syrup , oil, vanilla, flax eggs, and maple syrup. Mix well.
