Aileen’s Vegetable Beef Soup

   

My grandmother’s recipe and a family favorite.

It brings back fond memories of summer’s spent at her house.

INGREDIENTS
1 lb organic ground sirloin
1 medium onion, chopped
3 carrots, sliced
2 stalks celery, chopped
2 cans diced tomatoes
1 small can tomato sauce
1 32 ounce jar organic beef bone broth
1 tube frozen creamed corn
1 small bag frozen petite butter beans
1 small bag frozen purple hull peas
1 small bag frozen mixed vegetables
1 cup red potatoes, peeled and cubed
1/2 cup frozen okra
1 1/2 teaspoon salt
2 teaspoons garlic powder
1 teaspoon black pepper
DIRECTIONS

In large stock pot, brown meat with onions. Rinse with hot water and drain using colander to remove excess fat.

Add carrots , celery, tomatoes,sauce , bone broth , frozen butter beans, frozen corn, frozen mixed vegetables, frozen peas , and seasonings to stock pot with beef and onions.

Mix well and stir as you bring to a boil.

Reduce to simmer and cover with lid.

Cook on simmer for 45 minutes.
