Roasted Eggplant and Tofu

Eggplant and tofu pair nicely for a delicious plant based meal.

1 block firm tofu
1 small eggplant
1/4 cup Tamari Sauce
2 tablespoons avocado oil
1 tablespoon sesame seed oil
3 tablespoons arrow root
Red pepper flakes to taste

Remove tofu from package and use paper towels to remove excess liquid.

Cut tofu into cubes and set aside.

Add Tamari, oils, and arrowroot to a ziplock bag. Use hands to mix ingredients well in bag.

Add eggplant and tofu cubes to ziplock bag. Toss to coat well.

Spread eggplant and tofu evenly onto a cooking pan that has been lined with parchment paper. Can season with red pepper flakes if you prefer spicy.

Roast in preheated oven @425 for 20 -25 minutes. Tops will be brown and crispy edges.
