Black bean Burgers

Black bean burgers are so delicious and versatile.  Great served open faced on seeded or sourdough bread.  Try topping your favorite salad with a plant based protein.

INGREDIENTS
Create flax egg and set aside for 5 minutes to thicken. Mix together 3 tablespoons flax meal, 3 tablespoons water, 1 tablespoon ketchup, and 1 tablespoon Worcestershire sauce.
2 cans organic black beans - rinse , drain, dry with paper towels.
1 cup mushrooms
1/3 cup red onion, minced
1 cup toasted cashews
2/3 cup oatmeal
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon cumin
1 teaspoon spicy chili powder

Use a ninja or high powered blender to grind nuts and spices to meal texture.

Add mushrooms and oatmeal to nut mixture. Pulse 4 times to chop/ mix.

Fold in flax egg and mix well with a spoon. Set aside. You will add this to the bean mixture.

Add 1 1/2 cup beans to a large bowl. Mash with potato masher. Add remaining whole beans and nut/ oatmeal mixture. Mix well and form patties.

Spray both sides of burgers with olive oil.

Grill to heat through. Edges will be crispy and brown.

Delicious garnished with avocado, cilantro, green onions, and salsa. Wrap it butter lettuce for a bun ~less treat!
