Baked Chicken and Spinach Meatballs

These chicken spinach meatballs are easy to make and delicious served on top of spaghetti squash.

1 lb organic ground chicken
1 small onion, minced
2 stalks celery, minced
2 cups spinach, chopped
1/4 cup chopped fresh mushrooms
2 organic eggs
1 tablespoon spicy mustard
2 tablespoons Worcestershire sauce
1/4 cup parmesan cheese
1 1/2 teaspoon salt
1 teaspoon pepper
1/4 cup Primal Kitchen Buffalo sauce or Frank's Brand
1 tablespoon garlic powder

Line baking sheet with parchment paper or use a pizza stone without parchment paper. If you use a pizza stone, spray with cooking oil.

Add all ingredients to large bowl and mix well.

Use an ice cream scoop to form meatballs. Scoop out of bowl and place on baking dish.

Spray the tops of meatballs with olive oil cooking oil. Bake for 25-30 minutes.
